Pierre Koffmann Consultancy
Pierre Koffmann Consultancy offers one of the nation’s most revered chefs to advise restauranteurs and hoteliers on best practice.
Pierre has worked for the following organisations:
Morrisons
Pierre Koffmann worked with the M Kitchen team to create his signature dish, Beef Bourguignon, in a ready meal format for the supermarket. Pierre was a key part of the innovative brand launch of the M Kitchen meal solutions range and starred in the national advertising campaign with Freddie Flintoff. Pierre and the four other M Kitchen contributors, Nigel Haworth, Bryn Williams, Atul Kochhar and Aldo Zilli were the ‘host chefs’ launching the Morrisons pop up restaurants across the UK- where customers were invited to dine for free on the new range and rate what they felt their experience was worth.

Neil Nugent, Morrisons head chef and chief of innovation, said:
“To have Pierre Koffmann’s influence on one of the key dishes of the new M Kitchen range really was exciting. The fact that Pierre developed his signature recipe, beef bourguignon, for our customers to enjoy in their own homes has led to Morrisons becoming a real destination store.”
The M Kitchen range when launched in 2011 is part of Morrisons’ review of all their own brand products, seeing over 10,000 new and improved lines being launched into stores over a period of just 18 months.

Andrew Thompson, chairman of Thornton Hall Hotel
“We were delighted when Pierre agreed to be a consultant for our restaurant The Lawns. He has helped to bring up the standard of the food in our restaurant – culminating in the award of our third AA Rosette in September – and his knowledge and expertise has been a real asset to The Lawns and our drive to gain more accolades.
“Pierre has visited The Lawns on a number of occasions to teach our kitchen staff and advise our executive chef David Gillmore on menus and recipes. His presence is a real boost for the team and we feel privileged to have such an esteemed chef working with us.
“Pierre is also always at the end of the phone if David needs to call him for any technical advice or support.”
Royal Opera House
Pierre Koffmann assisted the Royal Opera House in a complete overhaul of the menus of its restaurants in 2010.
Selfridges
In 2009 Koffmann came out of retirement to celebrate the inaugural London Restaurant Festival. At Selfridges, Londoners were able to experience again the wondrous talents of Pierre Koffmann. His pop-up La Tante Claire called Restaurant on the Roof was a destination for anyone serious about food and a once in a lifetime opportunity for people to eat on the roof of Selfridges, where its customers are not usually allowed to go.
